A swan can separate milk from a mixture of milk and water. Also, its mind is fixed on attaining the nectar in the whorl of the lotus flower. Pure-hearted human beings devoted to serving God are compared to swans because they have the ability to extract the essence from everything they come in contact with, and also because their minds are fixed on attaining the nectar of true love of God.
